
Salad Nicoise is a speciality from Nice in the French Riviera. It is a quick, simple and healthy dish to make. So if you are looking for something different for your taste buds, then try this! If you are allergic to eggs then you can always substitute them with something else such as two avocados.

Serves 4
Main Ingredients:
- 175g of fresh tuna or 1 tin of tuna
- 4 large cooked potatoes, cut moderately small
- 4 plum tomatoes cut in 4 pieces
- extra fine French beans, cooked
- 4 small gem hearts, cut in quarters
- 1 red onion, chopped finely
- 4 boiled eggs, cooked for 7 minutes and each cut into quaters
- 6 anchovy fillets chopped into thin strips
- 16 black olives
- 8 basil leaves chopped
Salad Dressing:
- 7 tbp of extra virgin olive oil
- 3 tbsp red wine vinegar
- 2 tbsp fresh parsley, cut finely
- 2 tbsp freshly cut chives
- 2 garlic cloves, peeled and cut finely
- 1 tsp of salt
- 1 tsp grounded black pepper
Cooking Instructions:
- Whisk the salad dressing ingredients together.
- Put the tuna in a shallow dish and then pour half of the dressing over it. Cover it with a lid and put in the fridge for 1-2 hours to allow the tuna to chill and marinate.
- Heat a non stick frying pan on the hob for 3 minutes. Take the tuna out of the marinade. Fry the tuna steaks for 5-6 minutes or the tinned tuna according to your taste.
- Place the lettuce leaves into a large plate and then add the onion, tomatoes, potato, tuna, beans and anchovies. Use the remaining dressing to pour over the ingredients in the plate, then finish by adding the eggs, olives and basil leaves. Serve and enjoy!
